Join us at Hideout 2081 in Berowra for an evening shaped by the experience of Hilary and Stewart Wallace. Best known as the founders of Café Patina and now the faces behind Nomadic Table, Hilary and Stewart bring decades of hands-on hospitality knowledge to the table.

Over a relaxed four-course dinner, they’ll share real insights into building thoughtful Coeliac and gluten-free menus, drawing on years of running 5-star kitchens across the globe, adapting to dietary needs, and working closely with guests. This is an opportunity to hear honestly about what works, what doesn’t, and how inclusive menu design plays out in real venues.

You’ll leave with practical ideas you can take straight back into your Food Technology or Hospitality classroom, grounded in lived industry experience rather than theory. This event makes ticking off your industry currency simple! Enjoy a night of food, connection and fresh ideas while meeting your VET teacher training requirements.

About Your Hosts, NomadicTable

NomadicTable is the next chapter for Hilary and Stewart Wallace, former owners of Café Patina in Wahroonga and long-time hospitality operators. After closing their café in 2024, they created NomadicTable to continue cooking thoughtfully, sharing their knowledge, and working closely with people around food.

Stewart brings decades of kitchen leadership, from opening the Grand National Dining Room in Paddington to leading Café Sydney and the Garfish Restaurant Group for over a decade. Hilary’s background in hotel management and restaurant openings spans London and Cape Town, including work with the Conran Group and the internationally recognised Beluga Restaurant and Bar.

Today, NomadicTable focuses on bespoke catering, private cheffing and hospitality consulting, shaped by real-world experience and a practical approach to food that values seasonality, local producers and menus built with purpose. Their work is grounded, generous and always centred on bringing people together over good food.
